At Kuroge Wagyu Itto Giri Datenari, we have a "Miyagi Ingredients Ambassador" who is highly knowledgeable about the rich local ingredients of Miyagi Prefecture. While making abundant use of local ingredients from Miyagi, we also incorporate carefully selected ingredients from other prefectures. For example, dishes featuring fresh sea urchin from Hiranai Town in Iwate Prefecture are popular for their melt-in-your-mouth richness. Starting in October, dishes using the premium variety "Daikoku Maitake 'Shin'" from Niigata Prefecture will be introduced to celebrate mushroom season.

The allure of "Daikoku Maitake 'Shin'" lies in its rich flavor and firm texture. Compared to typical maitake mushrooms, it has a deeper aroma, a richer flavor, and more intense umami. Its thick, chewy texture remains intact even after cooking. It pairs exceptionally well with grilled meats and steaks, making for a luxurious dish.
